The dining experienceRaminder Malhotra, executive chef at Soho Spice, and one of a handful of exponents of the art of kebab making has created the new menu taking inspiration from chefs with royal pedigree including Tundee Mian, one of the prominent kebab craftsman of the 19th century. The kebab has a long and distinguished place in Indian culinary history, and few chefs master the art of manipulating the ingredients and precise degree of cooking necessary for a perfect, juicy kebab. Chef Raminder highlights the fine line in the art of kebab making - “What differentiates a great kebab from an indifferent roast is that it should be crisp on the outside and soft and succulent on the inside"

The dining experienceThe variety of spices and flavours used by the chefs at Soho Spice is what allows them to provide their customers with such an extensive and intricate range of kebabs, which change on a daily basis. Examples include steamed seabass with raw mango, topped with kokum and coconut tempered shrimps, wrapped in banana leaf; and tandoori pheasant breast marinated with orange rind, roasted cumin and rock salt. Raminder will be offering his signature hook kebab, a leaf-wrapped meat attached by hooks linked to one another and tandooried. The menu also includes vegetarian options such as potato kebab with a sweet and sour fruity filling, grilled over charcoal ambers. The kebabs are served with dal makhani, rice and naan, and priced from £7.50. For a lighter meal or bar snack, kebabs are available on their own, starting from £5.50.
